  1. Kosoi bwtwi

kosoi-bwtwiOnce you are done washing the beans, you clean them thoroughly and remove the fibers from their marginal area. You should cut every bean in such a careful manner that each piece is no longer than 3 to 4 cms. The green chilies should be cut longitudinally. You need to make them rings out of onions and cut those circles accordingly.

Fill a pan with one and a half liters of water, boiling it for around five minutes, while you keep the flame at a medium range. Add turmeric powder, in requisite amounts. You also need to add them pieces of Berma and let it boil for another five minutes. Add green chilies and cook for five more minutes, after which the beans should be added to the preparation. which has to be cooked for around 20 minutes. Simmer the gas flame and add crushed garlic letting the thing cook for a little over three minutes.

Add the final but crucial touch by garnishing the dish with Khundrupui leaves after you have transferred the cooked item into a serving bowl. You should always serve it hot with rice.

2. Muya Bai Wahan Chakhwi

You need a big pan to prepare this dish. First of all fill the pan with one and a half liters of water, after which you add baking soda, and let the dish boil for around five minutes. The foam created from all that cooking is removed gently.

Muya-bai-wahan-chakwi.jpgSalt is added as per your taste. You also add turmeric powder, and the boiling process should continue while you keep on adding chopped ginger and the split green chilies. The whole thing should boil for around about three minutes.

After which, you are supposed to add bamboo shoot and jackfruit seeds. The burner should and must be kept between a medium and high flame till the whole thing is boiled for ten more minutes. Add papaya and pork, while you let the dish cook for twenty minutes.

You simmer the flame after twenty minutes, and add the rice flour paste, while you keep stirring the curry. After five minutes, you have to add fresh lemon leaves and mix them into the curry. You have to keep the lid covered and leave the curry for almost 2-3 minutes. This dish needs to be served with hot rice.

3. Sobai Gudok

You have to wash and clean the lubhia and cut it into small pieces. Scales of the fish are supposed to be peeled off while the fish must be cleaned under running water. The chilies have to be washed, onions chopped finely and the potatoes cut into small cubicles.

Fill the pressure cooker with half a liter of water. You have to boil it after adding two tablespoons of salt, and half a spoon of turmeric powder.

Add berma, chili and onion and let the dish cook for in and around five minutes. After adding the fish, you have to place the lid and wait for two whistles. Simmer for almost two to three minutes.

Remove the lid and let the dish cool down. You have to sift the soup and put it in a plate. You must be careful enough while extracting them chilies from the mixture. Crush lubhia and mix it with chili paste. You have to add water which you have sifted and stir the whole thing till it settles down. The dish reaches its final stage when you garnish the mixture with coriander leaves.
