1) Khakra

Khakras are thin crackers made out of wheat flour, mat beans, and oil. They are usually served for breakfast and are enjoyed with a variety of pickles and chutneys. It is a healthy snack. The varieties of khakras are endless. Some of the varieties are pudina, jeera, chocolate, paprika, desi ghee etc. There are different methods to make this dish more delicious, for these crackers are rolled out after kneading them into a dough, quite similar to making a chappati. Which is flattened out with a wooden press and roasted. It is then cooled and stored with flour, when it is made into crispy items, for it does last longer. This should not be kept out in open for long durations. While traveling this is a healthy and convenient snack to carry along.

2) Dhokla

Dhoklas can be had for breakfast, as a side dish or a snack. The main ingredient is fermented batter from rice and chickpeas that are split, which can be served hot, cold or at normal temperatures. It is really delicious with green chutney and dates chutney. The combination is satisfying. The sweet and sour taste is accomplished, while you can have them with the add-ons. They are best eaten fresh, as soon as they are made. It is soft and fluffy, the ideal texture. Dhoklas are healthy, for they are steamed and there is the goodness of besan in them when you indulge. They are a treat any time of the day.

3) Son Papdi

A crisp north Indian dessert that just melts in your mouth. It has a crispy and flaky texture. Pistachios, almonds and saffron add to its taste. the dish is made out of besan flour, ghee and sugar. Maida and besan is stirred in ghee after mixing it. Sugar syrup, milk, and water are heated and added when in a liquid state, to the mixture. It should be beaten well until it forms strands. When it is cooled down, it is cut into cubes and this is really nice once consumed warm. Son papdi has a cotton candy-like texture. Rich in ghee, milk, nuts and besan with a touch of rose water for flavor, this is a sweet that can be had any time of the day. This is also made into big strands. It is served in a few other varieties, other than its traditional cube shape.
