1) Boondi Raita

Boondi raita can be had with pulao as it increases the taste and also the palatability of any dish. If the boondis are preferred to be consumed soft, then the cook must wait for fifteen to twenty minutes before the boondis are soaked in curd before serving, Add it just before serving if you want to have a crispy dish. This also provides a very cooling effect when consumed with cucumbers. The curd should not be sour, it should be rich and creaky like the greek yoghurt. Mix this with red chili powder and cumin powder, mix them well, finally it is served with chopped coriander leaves for the aroma and fresh taste.  Aloo parathas are great when had with the boondi raita.

2) Badam Ka Halwa

These are recipes that are passed on from the Noble houses of Rajasthan, perfected by years of trial and error before this dish has been popular. The delicacy is a rich one with a lot of almonds and ghee. There are a variety of almonds used while making such dishes. It is served in the winter season with a salty dish like poha for breakfast. It is also given to mothers after delivery. It is the richness of them nutrients in this dish that makes it good for fast recovery and for strength and stamina. It is a burst of energy and it is full of protein.

3) Pyaaz Kachori

Pyaaz Kachori is popular throughout Rajasthan, though it originated from Jodhpur. They are eaten with a sweet and spicy tamarind chutney and makes a perfect snack for any time of the day. It is made with onion and potato fillings. They make a filling snack with the combination of different chutneys. Spices are added to the batter and it is deep fried with fillings. It can be prepared, stored and reheated. Though it is slightly time-consuming but it is totally worth it. These are sold at most of them namkeen shops. Very few homes make this kachori now, as it available to fresh and hot. Potatoes has the carbs your body needs, and the wheat flour will be a hearty fill for your tummy. Finish this with a nice masala tea and the spices shall forever linger in your mouth.
