  1. Aloo Kangmet

aloo-kangmetThis dish is easy to make and requires minimal ingredients. Aloo Kangmet serves well as a side dish. To make this recipe you will need to have two potatoes, few red chillies, a chopped onion, oil, salt, and Coriander leaves.

Initially, boil them potatoes and mash those potatoes after peeling off the skin. Fry the red chilies in oil, and crush them well. Fry the onions next, slowly adding them mashed potatoes. Add all the ingredients and fry on simmer for a couple of minutes. Before serving the dish, sprinkle coriander leaves on top to garnish the dish well.

2. Mairen Saag (kumro tarkari)

mairen-saagThis is a dish made out of pumpkin, that will tingle your taste buds; wherein no saag is involved in it. You need a cubed pumpkin, sliced onion, salt and mustard oil to make this dish. Spices required are nigella, coriander, turmeric powder, and dry red chili.

Primarily, fry them nigella seeds in hot oil placed on a frying pan. Next, add chili and onions. Saute fry the mixture for a while and then add coriander powder along with some turmeric powder. Next, add them cubed pumpkin pieces to the mixture. Add salt and keep cooking till the pumpkin is soft. Before serving the dish, sprinkle coriander leaves over the dish.

3. Khamen Asinba Thongba

khamen-asinba-thongba.jpgIngredients required to make this dish are twelve small size tomatoes, one tablespoon Ghee, one teaspoon Kalonji seeds, one cup sugar (or accordingly), salt must be added as per the given specifications, and one small piece of lemon for added flavor.

Heat the ghee and roast kalonji seeds and tomatoes in it, till the tomato peel starts to wear off from its surface. Remove the peel and keep the mixture aside.

Boil the water; henceforward add sugar, salt, lemon peel and roasted tomatoes. Cook until a uniform syrup is achieved. Khamen Asinba Thongba is ready to serve.
