The sambar should be mixed with rice and eaten, served with hot papads for a complete taste. On hot days, having thick curd along with rice and sambar is next to perfect. The sambar is prepared with vegetables of choice, potatoes, drumsticks, and carrots, along with bitter gourd and okras (ladies finger) to give you a nice texture and tas te in this combination.

2) Urlai Roast

This is a roasted baby potatoes dish, which are the key to make this dry item, along with the required spices, while grinding them. The spices need to be roasted slowly, the more it is roasted the better is the outcome. This dish is done with regular potatoes cut into cubes. Coriander leaves are added as garnishing. The mustard seeds and urad dal are added in with the curry leaves, when it is sauted, while the ground mix gets added in with the coconut as well. The potatoes are added and cooked on low flame, where all the flavours are absorbed. This is served with rasam and steamed rice.

3) Chicken Chettinad

For this tasty dish you need to make the masala first and this is just the starting of its preparation. It is full of spices that are roasted and then the chicken is added, after it is marinated and kept aside for a while. Yoghurt can be used instead of lemon to tenderise the chicken when marinating. The onions are sauted until it is golden brown in texture and then the spices are kept aside, which are added one by one. This addition of spices one by one, makes this dish mouth watering and full of flavour. It is a dish that is tried out when people visit Tamil Nadu and it has become famous because of its exquisite flavour. With rice or phulka this is served and makes a great way to eat it. Onions with salt and lemon is served along with this dish for better digestion.
